Homemade Paleo Cinnamon Roll Bites

As if we weren't the annoying ones out of our friend group to begin with, my boyfriend and I took it up a notch by transitioning to an even healthier lifestyle - Paleo. I'm not doing it because of diet culture or because I think anything is wrong with me aesthetically. We just decided that we wanted to feel better - mentally and physically.

Probably TMI, but I have had some GI problems in college and it never occurred to me to me that it was probably correlated with high stress or the fact that I consumed copious amounts of queso and booze. I will say though that since I have for the most part stopped eating dairy, gluten and processed food, I feel like a whole new woman! And, these Paleo cinnamon roll bites are my morning game changers. They're more the consistency of corn bread - just a head's up. But, it's perfect because they're not too sugary that you don't feel disgusting after breakfast (IDK about you, but donuts or authentic cinnamon rolls make me feel miserable for the rest of the day).

One of my biggest pet peeves with recipe blogs is having to scroll through paragraphs and tons of photos before the meat and potatoes of the content. So, let's cut to the chase people. Without further adieu, here's how to make some bomb cinnamon roll bars:

Paleo Cinnamon Roll Bars

Prep time: 45 minutes

Cook time: 20 minutes


Full disclaimer: I never follow the exact measurements. Here are some general guidelines but just know the dough doesn't hold as well if you were to use real flour.

Cinnamon Roll Dough

CBD | MCT oil (1/2 cup)

Almond Milk (1/2 cup)

Coconut oil (1/2 cup)

Coconut flour (2 cups)

Almond flour (2 cup)

Salt (Sprinkles)

Eggs (2)

Cinnamon (1 tablespoon)

Honey (2 tablespoons)

Vanilla extract (1 teaspoon)

Oil Icing + Topings

CBD | MCT oil (2 tablespoons)

Coconut oil (1/4 cup)

Honey (1 tablespoon)

Pecans (If you use the half pecans, put two on each bite)

Cinnamon (1 tablespoon)


Preheat your oven to 350 degrees Fahrenheit.

In a large bowl, mix together your dry ingredients: Almond flour, coconut flour, salt.

Mix together your liquids: Eggs, almond milk, CBD|MCT oil, coconut oil, honey and vanilla extract.

Combine your liquids and your dry ingredients. Stir until it forms a dough-like substance.

On wax paper, or directly on your counter if you're feeling ambitious, roll out the dough until it's flat.

Sprinkle cinnamon across all of the dough. The dough might not hold that well, so you can separate it into small pieces and roll them into bite size balls.

Line a pan with wax paper and put the cinnamon balls on it spaced apart.

Put them in the oven for 15 - 20 minutes. Take those bad boys out and let them cool for five minutes.

While they're in the oven, create your "icing." I say the term loosely because it's actually just oil. Combine your CBD|MCT oil, coconut oil and honey. Top your cinnamon bites after they've cooled for a few minutes.

Then, sprinkle the excess cinnamon and add pecans.
